Ingredients

– 1 lb thinly sliced beef (ribeye or sirloin) – 4 cups dashi or chicken broth – 1/2 head napa cabbage, chopped – 1 block tofu, cubed – 1 cup mushrooms (shiitake or enoki) – 1 carrot, thinly sliced – 1 cup udon noodles – Ponzu sauce, for dipping – Sesame sauce, for dipping

Instructions:

Begin by preparing the broth in a pot. Bring the dashi or chicken broth to a gentle simmer over medium heat, keeping it warm for cooking at the table.

Arrange vegetables, tofu, and beef on a large platter. Keep raw ingredients separate from the cooked items to ensure food safety during cooking.

Place the pot in the center of the table. Using chopsticks or tongs, cook beef slices in the simmering broth until just browned only a few seconds.

Add vegetables and tofu to the hot broth. Simmer until they’re tender but not mushy. Each guest can add what they like and cook as they go.

Once cooked, dip the ingredients in ponzu or sesame sauce before eating. The sauces add flavor and balance the savory broth and tender beef.

Finish with udon noodles in the remaining broth. Let them soak up the flavor and enjoy as a satisfying end to the meal. Serve warm and enjoy!
