For the Dough: – 2 1/4 cups all-purpose flour – 2 1/4 tsp active dry yeast (1 packet) – 1/2 cup warm milk – 2 tbsp sugar – 1/4 tsp salt – 1 egg – 2 tbsp softened butter For the Filling: – 1 1/2 cups sweetened grated coconut – 1/3 cup sugar – 1 tsp cinnamon – 1/4 tsp nutmeg – Red food coloring (few drops) For Brushing: – 1 tbsp milk or beaten egg (optional)
Mix flour, yeast, sugar, salt, milk, butter, and an egg to form a soft dough. Knead well, then let rise in a warm spot until doubled in size.
In a bowl, mix grated coconut, sugar, cinnamon, nutmeg, and red food coloring. The bright red color is a classic signature of salara!
Roll the dough into a rectangle. Spread the sweet red coconut filling evenly over the surface, leaving a border around the edges.
Carefully roll the dough into a tight log, sealing the seam. Place seam-side down on a greased baking sheet and let it rise again briefly.
Brush with milk or egg wash, then bake at 350°F for 25–30 minutes until golden brown. The bread should sound hollow when tapped.
Cool before slicing to reveal the vibrant spiral. Salara is perfect warm or room temperature with tea, coffee, or as a sweet celebration bite.
