Perfect Manchego Cheese Bites

Ingredients

– 1 cup shredded Manchego cheese (aged is best) – 1/2 cup grated Parmesan cheese – 1 large egg – 1 tbsp all-purpose flour – 1 tsp fresh thyme (or 1/2 tsp dried) – 1/4 tsp garlic powder – 1/4 tsp ground black pepper – Optional: honey or fig jam for drizzling

Instructions:

Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone mat.

Mix ingredients in a bowl: Manchego, Parmesan, egg, flour, thyme, garlic powder, and pepper. Combine until a sticky dough forms.

Form bites: Scoop out 1-tablespoon portions and roll into balls. Space them evenly on the baking sheet.

Bake for 13–15 minutes or until golden and crispy on the outside but soft inside.

Serve warm, optionally drizzled with honey or fig jam for a sweet-savory finish.
