Fruit Cake
(Makes 2 pizzas): – 3 1/2 cups (440g) all-purpose or bread flour – 1 1/2 teaspoons salt – 1/2 teaspoon active dry yeast – 1 1/4 cups (300ml) cold water – 1 tablespoon olive oil (plus more for greasing)
In a large bowl, whisk together flour, salt, and yeast. Add cold water and olive oil. Stir with a wooden spoon or hand until a shaggy dough forms.
Knead in the bowl or on a lightly floured surface for 2–3 minutes until smooth. It’s okay if it’s slightly sticky.
Place the dough in a lightly oiled bowl, cover with plastic wrap or a lid, and refrigerate for 12–24 hours.
Remove dough from fridge, divide into 2 balls, and let rest at room temp for 1–2 hours before shaping.
On a floured surface, stretch or roll each dough ball into a 10–12" round. Add your favorite sauce and toppings.
Bake at 475°F–500°F (245°C–260°C) on a pizza stone or sheet for 10–15 minutes until crust is golden and bubbly.
