Ingredients

– 1 cup whole wheat flour – 1/2 tsp baking soda – 1/2 tsp cinnamon powder – 1/4 cup olive oil – 1/2 cup unsweetened applesauce – 1/4 cup honey or maple syrup – 1/2 cup chopped mixed dried fruits (dates, apricots, raisins) – 1/4 cup chopped walnuts or almonds – 1/2 cup orange juice – 1 tsp vanilla extract

Instructions:

Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper. Soak the dried fruits in orange juice for 15 minutes while preparing the batter.

In a bowl, mix flour, baking soda, and cinnamon. In another bowl, whisk olive oil, applesauce, honey, and vanilla until smooth. Add soaked fruits to this.

Combine the dry and wet ingredients gently. Fold in nuts without overmixing. Pour the batter into the pan and level the top with a spatula.

Bake for 30–35 minutes or until a toothpick comes out clean. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Once cooled, slice and serve. Store in an airtight container. It tastes even better the next day and stays moist and flavorful for up to 4 days.
