– 1 lb ground beef – 1 cup cooked white or brown rice – 1 can (15 oz) black beans, drained – 1 can (15 oz) diced tomatoes – 1 cup corn (frozen or canned) – 1 packet taco seasoning – 1 cup shredded Mexican cheese – Salt and pepper to taste – Optional: cilantro, green onions, lime wedges
Cook 1 lb ground beef in a large skillet over medium heat until fully browned. Drain excess fat for a cleaner, leaner finished dish.
Stir in canned diced tomatoes, black beans, corn, and taco seasoning. Cook for 2–3 minutes until everything is well coated and heated.
Add 1 cup of cooked rice and stir to combine. The rice absorbs the bold flavors and gives the dish its hearty, skillet-style texture.
Cover the skillet and let it simmer on low for 5–7 minutes. This allows the ingredients to meld and results in a delicious, cohesive meal.
Sprinkle with shredded cheese and garnish with chopped cilantro or green onions. Serve hot with lime wedges or a side of tortilla chips.
