Fruit Cake
– 2 lbs ground beef – 1 cup breadcrumbs – 1/2 cup milk – 2 eggs – 1 small onion, finely chopped – 2 cloves garlic, minced – 1/4 cup ketchup (plus more for topping) – 1 tbsp Worcestershire sauce – 1 tsp salt – 1/2 tsp black pepper – 1/2 tsp dried thyme (optional)
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan for easier cleanup.
Chop 1 small onion and mince 2 cloves of garlic. These will add flavor and moisture to your meatloaf mixture.
In a large bowl, combine 2 lbs ground beef, 1 cup breadcrumbs, 2 eggs, and 1/2 cup milk. Mix gently to avoid compacting the meat.
Stir in the onion, garlic, 1/4 cup ketchup, 1 tbsp Worcestershire sauce, 1 tsp salt, 1/2 tsp pepper, and 1/2 tsp dried thyme (optional).
Form the mixture into a loaf shape by hand or press it into a loaf pan. Don’t pack too tightly or the meatloaf may become dense.
Spread a thin layer of ketchup over the top of the loaf for a sweet and tangy glaze. This helps seal in moisture while baking.
Bake in the preheated oven for 55–65 minutes or until internal temperature reaches 160°F. Rest for 10 minutes before slicing.
Slice and serve your meatloaf with mashed potatoes, green beans, or your favorite sides. It's even better the next day!
