Cook 1 cup of long-grain white rice in 2 cups of water. Bring to a boil, cover, reduce heat, and simmer for 15–18 minutes until tender.
Once the rice is done, fluff with a fork and let it cool for 2–3 minutes. This helps keep the grains separate and prevents clumping.
Stir in 1 tablespoon of olive oil and 2 tablespoons of fresh lime juice. The citrus adds brightness and the oil gives it a silky texture.
Finely chop 1/4 cup of fresh cilantro and gently fold it into the rice. Cilantro brings a refreshing herbaceous flavor to the dish.
