Fruit Cake
– 3 ripe bananas – ½ cup unsalted butter (melted) – ¾ cup brown sugar – 1 egg – 1 tsp vanilla extract – 1 tsp baking soda – Pinch of salt – 1½ cups all-purpose flour – ¾ cup chocolate chips
Preheat your oven to 350°F. Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal after baking.
In a large mixing bowl, mash the bananas until smooth. The riper the bananas, the sweeter and more flavorful the bread.
Add melted butter, brown sugar, egg, and vanilla to the mashed bananas. Mix until well combined and smooth.
Sprinkle in baking soda and salt, then stir in flour. Mix just until the flour disappears. Do not overmix the batter.
Gently fold in chocolate chips. You can also add walnuts or pecans if you like a little crunch in your banana bread.
Pour the batter into the prepared pan. Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
Let the banana bread cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely before slicing.
Enjoy your freshly baked chocolate chip banana bread warm or at room temperature. Perfect with coffee or as an afternoon snack!
