Fruit Cake
– 2 cups grated carrots – 1½ cups all-purpose flour – 1 cup sugar – ½ cup vegetable oil – 2 eggs – 1 tsp baking powder – ½ tsp baking soda – 1 tsp cinnamon – ½ tsp salt – 1 tsp vanilla extract – ½ cup chopped walnuts (optional)
Preheat the oven to 350°F (175°C). Grease and flour a cake pan or line it with parchment paper for easy removal after baking.
In a large bowl, beat the eggs, sugar, oil, and vanilla until well combined. This forms the base of your moist and flavorful carrot cake.
In another bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon until evenly mixed and lump-free.
Gradually add the dry ingredients to the wet mixture, stirring until just combined. Don’t overmix to keep the cake light and fluffy.
Fold in the grated carrots and walnuts (if using) gently. Make sure they’re evenly distributed throughout the batter.
Pour the batter into the prepared pan and bake for 30–35 minutes. Cool completely before serving or frosting as desired. Enjoy!
