Easy Apple Coffee Cake Recipe

For the Cake: – 1/2 cup unsalted butter, softened – 1 cup sugar – 2 large eggs – 1 tsp vanilla extract – 2 cups all-purpose flour – 2 tsp baking powder – 1/2 tsp salt – 1 cup sour cream – 2 medium apples, peeled and diced – 1/2 tsp cinnamon (for apples) – 1 tbsp sugar (for apples) For the Streusel: – 1/3 cup all-purpose flour – 1/3 cup brown sugar – 1/2 tsp cinnamon – 1/4 cup cold butter, cubed

Peel and dice 2 medium apples. Toss with cinnamon and a little sugar. Set aside while you prepare the batter and streusel topping.

Combine flour, brown sugar, cinnamon, and cold butter. Use a fork or fingers to blend until crumbly. Chill until ready to use.

Cream together butter and sugar. Add eggs and vanilla, then mix in flour, baking powder, and sour cream for a thick, rich batter.

Spread half the batter into a greased pan. Top with half the apples, then repeat layers. Sprinkle the streusel topping over the final layer.

Bake at 350°F for 40–45 minutes or until a toothpick comes out clean. Cool in the pan slightly before slicing and serving.

Serve warm or at room temperature. Store covered at room temp for 2 days or refrigerate for longer freshness. Great for breakfast or dessert!
