Fruit Cake
– 1.5 lbs baby or Yukon gold potatoes – 1 tbsp olive oil – 1 tsp garlic powder – 1 tsp paprika – 1/2 tsp salt – 1/4 tsp black pepper Optional Add-Ins – Fresh herbs like rosemary or parsley – Grated Parmesan cheese – A dash of chili flakes for heat – Lemon zest for brightness
Wash and dry potatoes. Cut into 1-inch cubes. No need to peel if using baby or thin-skinned potatoes.
Toss potatoes in a bowl with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
Preheat air fryer to 400°F for 3–5 minutes. A hot start helps develop that perfect crispy edge on every potato piece.
Place potatoes in a single layer in the basket. Air fry at 400°F for 15–18 minutes, shaking halfway through for even browning.
Once golden and fork-tender, remove potatoes and garnish with fresh herbs or cheese. Serve immediately for best texture.
Pair with eggs for breakfast, alongside grilled meats, in salads, or as a tasty game-day snack with dipping sauces.
