Fruit Cake
For the Cookies: – 2 3/4 cups all-purpose flour – 1 teaspoon baking soda – 1/2 teaspoon baking powder – 1 cup unsalted butter (softened) – 1 1/2 cups granulated sugar – 1 large egg – 1 1/2 teaspoons vanilla extract – 1/2 teaspoon almond extract (optional) – 3 tablespoons milk (if needed for rolling) For Decorating: – Royal icing or buttercream – Holiday sprinkles or colored sugar – Food coloring (gel preferred)
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper. In a bowl, whisk together flour, baking soda, and baking powder. Set aside.

In a large bowl, cream butter and sugar until light and fluffy. Beat in egg, vanilla, and almond extract.
Gradually add the dry ingredients to the wet. Mix until dough forms. Chill dough in the fridge for 1 hour.
Roll dough on a floured surface to 1/4 inch thick. Use holiday cookie cutters to shape.
Place cookies on the prepared sheets. Bake for 8–10 minutes until edges are just golden. Cool completely on a wire rack. Decorate cooled cookies with icing and festive sprinkles. Let icing set before storing.
