Autumn Chopped Chicken Salad Recipe

Ingredients

Salad Ingredients – 2 cups cooked chicken, chopped – 4 cups chopped romaine or mixed greens – 1 medium apple, diced – 1/3 cup dried cranberries More Salad Ingredients – 1/3 cup crumbled feta or goat cheese – 1/4 cup chopped red onion – 1/3 cup candied or toasted pecans – Optional: bacon bits for added crunch Dressing Ingredients – 1/4 cup olive oil – 2 tbsp apple cider vinegar – 1 tbsp Dijon mustard – 1 tbsp maple syrup or honey – Salt & pepper to taste

Instructions:

Wash and chop lettuce, apples, and onions. Pat chicken dry and cut into bite-sized pieces. Toast pecans if preferred.

In a small bowl or jar, whisk olive oil, vinegar, Dijon, and maple syrup. Season with salt and pepper. Shake well before serving.

In a large bowl, combine greens, chicken, apple, cranberries, cheese, onions, and pecans. Drizzle with dressing and toss gently.

Serve immediately for best texture. Pair with warm bread or soup for a hearty fall meal. Great for meal prep or entertaining.

Swap chicken for turkey, pears for apples, or walnuts for pecans. Use a creamy dressing like poppyseed for a different flavor.
