Fruit Cake
– 2 large Russet potatoes – 1 tsp olive oil – 1/2 tsp kosher salt – Optional toppings: butter, sour cream, chives, cheese, bacon bits
Scrub potatoes clean and pat dry. Pierce each potato several times with a fork to allow steam to escape during cooking.
Rub each potato with olive oil and sprinkle with kosher salt. This helps create a perfectly crispy and flavorful skin.
Preheat air fryer to 400°F for 3–5 minutes. Preheating ensures the potatoes cook evenly and the skin crisps up well.
Place potatoes in the air fryer basket. Cook at 400°F for 35–40 minutes, flipping halfway through, until fork-tender.
Insert a fork or knife—if it slides in easily, they’re ready. If not, cook for an additional 3–5 minutes as needed.
Slice open and fluff the insides with a fork. Top with your favorite ingredients like butter, cheese, sour cream, or chives.
