– 2 cups all-purpose flour – 1 ½ tsp baking soda – ½ tsp salt – 1 tsp cinnamon – ½ tsp nutmeg – ½ tsp cloves – ½ cup unsalted butter, softened – 1 cup sugar – 1 egg – 2 cups unsweetened applesauce – 1 tsp vanilla extract – ½ cup chopped nuts (optional) – ½ cup raisins (optional)
Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan. Sift flour, baking soda, salt, and spices into a medium-sized bowl.
In a large mixing bowl, cream the butter and sugar until light and fluffy. Add the egg, beating well. Stir in the applesauce and vanilla extract.
Gradually add dry ingredients to the wet mixture, stirring just until combined. Fold in nuts and raisins if using. Don’t overmix the batter.
Pour the batter into the prepared pan, spreading evenly. Bake for 35-40 minutes or until a toothpick comes out clean when inserted in the center.
Let cake cool in the pan on a wire rack. Serve plain or dusted with powdered sugar, or top with cream cheese frosting for extra richness.
