Fruit Cake
– 12 Medjool dates (pitted) – 1/2 cup natural peanut butter – 1/2 cup crushed peanuts – 1 cup dark chocolate chips – 1 tbsp coconut oil – Sea salt (optional)
Slice each date open without cutting through. Gently pull them apart and remove pits if not already pitted. Set aside on a parchment-lined tray.
Fill each date with about a teaspoon of peanut butter. Use the back of the spoon to smooth it out so it fills the center completely.
Sprinkle crushed peanuts over the peanut butter. Lightly press so they stick. Chill the tray in the freezer for 10 minutes.
Meanwhile, melt dark chocolate chips with coconut oil in the microwave or on a double boiler until smooth. Stir well to combine.
Dip each stuffed date in the melted chocolate using a fork. Let excess drip off, then place back on the tray. Repeat for all dates.
Sprinkle with sea salt if using. Freeze the tray for 15 minutes or until set. Enjoy your healthier Snickers straight from the fridge!
