Ingredients

– 3 cups all-purpose flour – 3/4 cup brown sugar – 3/4 cup molasses – 1 egg – 1/2 cup unsalted butter, softened – 1 tsp baking soda – 1 tbsp ground ginger – 1 tbsp ground cinnamon – 1/2 tsp ground cloves – 1/2 tsp salt

Instructions:

In a large bowl, cream butter and brown sugar until light and fluffy, then beat in the egg and molasses until well blended.

In another bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt until evenly mixed.

Gradually add dry ingredients to wet mixture, stirring until a soft dough forms.

Divide dough in half, wrap in plastic, and chill in fridge for at least 1 hour or until firm.

Preheat oven to 350°F (175°C). Roll out dough to 1/4-inch thickness and cut into shapes.

Bake cookies on lined sheet for 8–10 minutes. Cool on wire racks and decorate if desired.
